Chakhao Kheer is a beloved traditional dessert from Manipur, made with the prized Chakhao Amubi — a fragrant black rice known for its deep purple hue, nutty aroma, and rich nutritional profile. Slow-cooked in full-fat milk and kissed with cardamom and dry ginger, this kheer is comfort in a bowl.
🛒 Ingredients
½ cup Black Rice (Chakhao)
500 ml Full-Fat Milk
¼ cup Sugar
1 pinch Salt
¼ tsp Dry Ginger Powder
¼ tsp Cardamom Powder
🥜 Chopped Nuts — pistachios, almonds, cashews (as per choice)
👩🍳 How to Cook

Soak the rice. Wash the black rice thoroughly and soak in water for 3–4 hours. This softens the grain and brings out its deep purple colour.

Cook in milk. Add the soaked rice into boiled milk in a heavy-bottomed pot. Allow to boil on medium heat, stirring frequently to prevent sticking.

Sweeten & spice. Add sugar and keep stirring until dissolved. Reduce heat, then stir in dry ginger powder and cardamom powder for that signature warmth.

Garnish & serve. Top with your choice of chopped dry fruits — pistachios, almonds, or cashews. Serve hot or cold. Both are equally divine! 🍽️
