Hawaichar Akangba

Hawaichar (Axone) is fermented soyabean product of Manipur, Soyabean seeds in dry form are soaked overnight. Then it is cooked in traditional way in an open mouthed pot or more recently in pressure cookers. Once done, it is scooped out, the stew produced is sipped as a beverage, while the cooked seeds are fermented by packing them tightly with cotton cloth and covering them with fig leaves. The fermentation is natural and takes about 4 to 5 days. After which the Hawaichar can be eaten as is or dried for storage. Hawaichar can be made into an everyday chutney with salt and chilli or for cooking vegetarian dishes. It is a great source of protein and is known for their anti-cancer and anti-osteoporosis effects.
